Pulled Pork
- 6 lb Boston Bottom
- 1 Cup of Chicken Broth
- Seasonings: Salt, Pepper, Cumin, and Dry Mustard
- Rub meat with all of the seasonings. (I’m sorry, I don’t measure. Do what looks good!)
- Place meat in crockpot.
- Pour chicken broth over the meat.
- Cook on low for 12 hours.
Tips from our kitchen to yours:
~ I like to unwrap the meat, rub it down with seasonings, put it in the crockpot with the chicken broth, cover it, and put it in the refrigerator the night before. That way I can just set my alarm in the morning and throw the pot into the cooker and be done with it. It sounds silly since there is so little prep anyways. But it is helpful for me to do as much prep as possible at night, while Jordan is still at work and after my kids are already in bed. That way I have less to do when we are all together in the morning.
~ To make store bought, bottled BBQ sauce taste just fabulous…… About an hour before you are ready to eat your pork drain the liquids off of it. Put your liquids in a bowl in the refrigerator. Give the fat time to separate, spoon it off, and chunk it. Then mix your remaining liquids with your bottled BBQ sauce in a saucepan on the stove top. Yum.
~ My favorite meats are meats I can cook and then repurpose into many meals. This is the perfect example. Obviously, this makes the best BBQ sandwiches. We also love to eat it shredded over baked potatoes, or (my personal favorite) nachos!
Baked Potatoes
- Desired Amount of Baking Potatoes
- Crisco
- Sea Salt
- Heat oven to 400.
- Rinse and dry potatoes.
- Poke holes in potatoes with a fork.
- Rub crisco all on the outside of each potato.
- Generously salt the outside of each potato.
- Place each potato directly on the baking rack, with a cookie sheet on the rack below to catch any drips of oil.
- Bake for 1 hour.
Glazed Carrots
Can I just say, I have a major addiction to these lately. Definitely the yummiest way to have carrots. Mm!
- 2 lbs of Baby Carrots
- 1/2 Stick of Butter
- 1/4 Cup of Brown Sugar
- Salt and Pepper
- Rinse carrots, put them in a pot, and cover with water. Bring carrots to a boil on the stove top.
- When carrots start to boil, cover them, and then turn them down to medium heat.
- Let carrots simmer until soft, for about 30 minutes.
- Add butter, brown sugar, and a generous amount of salt and pepper.
- Stir together and keep covered until you are ready to serve!
